The Mark Restaurant’s Chef Manny Rubalcava Plates Grilled Mahi-Mahi with Heirloom Tomatoes

The Mark Restaurant, a landmark in downtown Bakersfield, is under new ownership. Ryan and Mikela Oberg purchased the restaurant earlier this year. Chef Manny Rubalcava has been with the restaurant for many years, having worked his way up from dishwasher to executive chef. Manny says lots of new innovations are underway, and he is excited about the future. Come down and check out the new Mark!

On the Menu

Grilled mahi-mahi with a gruyere polenta cake, wilted spinach and glazed baby carrots on a bed of heirloom tomatoes 

Directions

Grill mahi-mahi. Lightly sautee spinach with garlic and shallots. Combine gruyere cheese with polenta. Cool on sheet pan and cut with cookie cutter. Sautee polenta in butter until golden. Sautee baby carrots in butter until tender. Slice heirloom tomatoes. Garnish with lemon and rosemary.
